1.) Peel and slice potatoes, put in a 13×9 greased pan and place in a pre-heated 425 degree oven.
2.) While potatoes are cooking, heat a large skillet with 2 tbsp. of oil. Saute onion, green pepper, and garlic. Remove and set aside for later.
3.) Place ground beef in the skillet and brown while cutting the beef with a spatula like you would making meat for tacos.
4.) Place the bbq sauce in with the meat along with the onion, green pepper, and garlic mixture. Stir and mix into the potatoes and cook for another 15 minutes.
5.) With 7 minutes left place the spinach, parmesan cheese, and sliced tomatoes on top of the beef and potato mixture and serve when the parmesan cheese has browned and spinach has cooked down.
