Whisk eggs and baking powder together until smooth.
Add to flour, milk, vegetable oil, sugar, honey, vanilla extract, and cinnamon powder and still until smooth. This will be enough for 8- 4×4 in. waffles and the mix will keep for a week after you make it.
Pour enough batter to fill the bottom of the waffle iron and place the sliced banana and white chocolate chips on top of the batter. Pour enough batter to cover the bananas and white chocolate chips and close the lid to the iron for three minutes or until golden brown. This will keep the bananas and chocolate from burning and will act as a stuffing.
Once finished, top with fruit, powdered sugar, and maple syrup and enjoy.
