Cut all veggies and meat into small pieces and saute everything except for the spinach and tomatoes.

2.) Beat eggs until smooth.  Add cream or milk if desired.

4.) Cover the pan with olive oil and drop the spinach in the hot pan.  Let it cook down until somewhat flat.

5.) Pour the eggs on top of the spinach.  This is when I put salt, pepper, cayenne pepper, etc. on the omelette.

6.) Wait for about 45 seconds or until the bottom is solid.  Flip the omelette and place all veggies, pepperoni, salami, and cheese on one half of the omelette.

7.) Close immediately and flip back and forth to ensure the egg is cook to your liking.

8.) Once on your plate, place the tomatoes on top and sprinkle parmesan cheese on top and serve.

Tips:  Use a shallow pan to allow easy flipping and if using stainless steel make sure it is properly oiled and not too cold or hot or else the egg will stick.  A scramble is always tasty though:)
