BBQ Pork Tacos with Cilantro Lime Sauce

Place the cubed pork onto skewers or cook in a grill pan.  Place on the grill and cook until cooked through.

Grill the peppers until nicely blackened.

 

RICE:

Rice Cooker: rinse the rice then place all ingredients in the rice cooker and turn on.

Stove Top: rinse the rice then boil the water, toss all ingredients in the pot, cover and reduce heat to low.  Cook for 20 min.

 

TORTILLAS:

Mix together until it creates a dough, knead for about 2 minutes.  Wrap in plastic and let stand for 30 min.

Heat Cast Iron Skillet to medium high.

Cut the ball into 8 equal parts.  Place one part in-between two pieces of plastic wrap and form the tortilla.

Immediately place onto skillet for 30 sec., flip and cook opposite side for 30 sec.

Keep warm and moist under towel while waiting to be served.

 

CILANTRO LIME CREAM SAUCE:

Pulverize the cilantro and lime in a blender.  Stir in the mayonnaise and pulse twice.  Place in fridge until time to serve.

 

GUACOMOLE:

Place all ingredients in a blender or processor and pulse until you reach your desired consistency.
