Strawberry Vinaigrette
1.) Put the strawberries, sugar, apple cider vinegar, and olive oil into a blender and blend until smooth. Place aside for later.
2.) Heat a skillet on medium low Heat, cut the chicken into 1/2 inch cubes, season, and place in heated skillet. Cook for 7 minutes.
3.) Cut the red leaf lettuce, tomato, and squash. Place in a mixing bowl, sprinkle cheese and mix with hands or tongs.
4.) Place the salad into serving bowls and place the chicken and pecans on top of the salad. Drizzle the vinaigrette and enjoy.
